Lean Mean Thai Green Curry

A healthy spin on a Thai classic, this dish packs a real spicy punch and a combination of ingredients that were just made for each other!! We’re getting hungry talking about this one. Give it a go, your will not be disappointed!


1 onion, chopped
2 tbsp green curry paste (light option if available)
200ml low-fat coconut milk
150ml chicken stock
450g chicken breast, cubed
115g green beans, halved
1 tbsp fish sauce
1 tbsp lime juice
4 tbsp coriander


Saute onions until soft, add the curry paste and cook for a further minute. Stir in the low fat/light coconut milk and chicken stock. Add the chicken and beans and simmer for 15 minutes. Stir in the fish sauce, lime juice and coriander.

Serve with wholegrain rice if desired. Alternatively you can serve with boiled vegetables or salad if you’re on the carb wagon!
